Traditional tea technique masters:
On March 25, Zhao Ling, a 16-year-old student roasts the leaves by hand at a local competition called Master of Roasting West Lake Longjing Tea in Hangzhou, Zhejiang. Competing with 25 other inheritors of this traditional technique, Zhao, the youngest candidate, puts her hands into metal basins with temperatures of up to 260 C. It’s a process that “demands patience and labor,” said Zhao.
