Translating the names of Chinese cuisines is tricky, as they not only include information about the ingredients, but also involve a lot of culture. In 2012, Beijing announced official translations for the 2,158 most popular Chinese dishes. The basic rule of translating them is to include the main ingredient, the cooking method and the flavor, for example, Beef and Ox Tripe in Chili Sauce (夫妻肺片). Of course, you can always give your friends a direct translation afterwards, for a laugh or a shock.
